Merry Christmas Y'all!

Today I am sharing my all time FAVORITE Christmas cookie recipe! Many of you may or may not know that I have Celiac's Disease, this version has been done with Gluten Free flour and a little xanthum gum for those of us with gluten intolerant tummies! You can also follow the recipe exactly with regular flour if you don't have a gluten free diet. 

Now this Cookie sounds interesting but I am telling you it is always requested and my number 1 fan favorite. This is a recipe from my grandmother to my mother to me, and now I am sharing it with you! Are you ready to have your world rocked?! Let's Bake. 



Molasses Mint Chip Cookies

350 Degrees for 9 min

3/4 cup Shortening (melted)

1/4 cup Molasses

3/4 cup Sugar

1 Egg

2 tsp Baking Soda

2 cups Gluten free Flour (or regular)

1/4 tsp Xanthem Gum if doing the GF version

1/2 tsp Cloves

1/2 tsp Ginger

1/2 tsp Sea Salt

1 tsp Cinnamon

3 oz Mint Chips or chopped Andes Candy

3 oz Semisweet Chocolate Chips


Step 1: Beat Sugar Molasses and Shortening. 

Step 2: Add egg and Mix

Step 3: Sift dry ingredients 

Step 4: Add dry mixture to wet ingredients

Step 5: Fold in the mint and chocolate chips

Step 6: Roll the dough into round balls and then roll in sugar before placing on the sheet

Bake for 8-11 minutes depending on your oven, mine is perfect at 9. The cookies will be soft but firm up when cooling.
