sweet potato hash, wilted arugula, and poached egg! YUM!!!!!!!!!

One serving

Time 15 min

Hash

1/4 sweet potatoe cubed  

2 tblsp diced onion  

1 tsp olive oil

salt

pepper

2 pinches cumin

Pinch of cinnamon 

throw it all in a land on medium high and let Brown for five min. 

Turn down to low and cover

cook until desired texture  

about ten more min

 

poached egg  

One egg

1/4 c white vinegar

pot of water  

Bring a gentle boil to the water and add vinegar 

take a spoon and still the hot water until it makes a little whirpool

quickly crack the egg into the whirlpool  

cook 5-6 min  

remove and let sit 2 min

 

Arugula  

1 c Arugula

1 tsp olive oil  

sprinkle of salt

while egg is resting toss arugula olive oil and salt into the pan with the potatoes and onions.

let wilt (2 min) and serve on plate. 

top with the egg and any desired seasoning! 

i like smoked paprika:)

 

enjoy with some green tea and lemon water!
